I saw on Facebook recently a link to a no-potato salad, a recipe to make knock off potato salad, using cauliflower. I’ve made mashed cauliflower for years and enjoy potato salad so I couldn’t believe I had never thought of this before. I am terrible about following recipes so I skimmed the article and decided to wing it. I used the things I had on hand to make this instead of going out for anything. If your the type to follow a recipe I’ll share mine with you, if you are not just skim and wing it too!
The ingredients
- Cauliflower
- Mayonnaise
- Mustard
- Salt & Pepper
- Onion
- Garlic
- Olives
For this recipe you don’t want your cauliflower to be mushy. I steamed the cauliflower until it was fork tender. Put the cauliflower in a large mixing bowl, add to this a few TBSP of mayo a tsp or two of mustard a TBSP of garlic and onion powder, or diced onion and garlic, salt and pepper to taste and I threw in a few olives. The original recipe called for dill pickles, but I don’t like pickles and didn’t have any. Mix all this together and serve.
Taste
I was very surprised how well this turned out. It taste just like potato salad and is healthier for you. I may hone the recipe more but this first try was delicious and super easy to make. I will be making this many more times now that I know about it. I bet if you showed up to a picnic people would devour this and just think its potato salad. The main benefit is that cauliflower is much lower in carbs than potato’s, are not in the nightshade family and have no allergy issues.
