I got a crockpot for Christmas and decided to break it in with my cold weather stand by, Chili. When the temperature plummets I always turn to chili for comfort. Whether chili should or should not have beans is a heated debate. For me being paleo I of course will be making no bean chili. I guess you could ruin this recipe by adding beans. This will be a meat feast chili too so no vegans allowed. If you even think of making this with soy I will come to your house and punch you in the face. With the pleasantries aside lets get down the cooking.
Gather The Ingredients
- Chuck Roast, mine was 2.75 lbs.
- Ground Beef 1 lb
- Chipotle peppers in adobo sauce
- Crushed Tomatoes 1 can
- Tomato Paste 3 tbsp
- 1 Onion diced
- 1 tbsp Cumin
- 1 tsp chili powder
- 1tsp Cayenne powder
- 1 tsp garlic powder
- 1/2 cup beef broth
- Salt and Pepper to taste
First cut the roast into one inch chunks and brown them in a skillet. I then added the browned meat to the crock pot. Add the crushed tomato, adodo peppers and tomato paste on top. In the same skillet add the ground beef. I had some cooked ground beef that I canned so I used it. Dice your onion and add all spices to the pot. Stir and let the crockpot do it’s magic. Me I’m going to bed and I’ll wake up to the smell of chili filling my apartment.
