I saw an image on the internet a while back about 2 ingredient pancakes. I don’t care much for recipes. I just went and tried it. Bananas and eggs were the only ingredients. I mashed one banana and mixed with an egg and cooked in a skillet. When I tried to flip over my paleo pancake it fell apart. It looked like a dog got ahold of it. The paleo pancake was delicious though.
Today I decided to tackle it again. This time I’ll make a decent paleo pancake. Same two ingredients as last time. New techniques. How did it turn out this time? Lets find out!
Making The Paleo Pancakes
Normally I like to start recipes with the ingredients. Put them all in a bullet point list to use. I don’t see a point this time. You need 1 banana and 1 egg per batch. You also need 1 tbsp of coconut oil per batch to cook. I say batch over pancake for a reason well get into later.
If you have the heat too high on these they will burn. I began with the heat on medium. I had to turn it down because the first pancake was burning. I went just a bit under medium heat. I looked up a recipe online and saw it said to cook for 10 minutes per side. Though just skimming it I did not see it said on very low heat. I get too excited to just go do things.
The first paleo pancake I made burnt on the bottom and fell apart while flipping. Another failure. Still tasty. I had an idea on the second banana that I tried. I would pour the mixture in smaller pancakes. Not use the entire mixture. Also I covered the skillet and cooked for 10 minutes that way. I figured if I didn’t flip it I wouldn’t have the issues with breakage.
Covering the skillet worked perfectly. The bottom got a nice browning and the top firmed up. I was able to slide them out the skillet on my plate. No breaking. I cooked two small pancakes this way then one large one. With the covered top method I made a large paleo pancake without breaking. So you can do both.
Taste
I bet your thinking these taste like eggs. You’re yelling at the computer. James you made banana eggs not paleo pancakes. Wrong you are my friends. I taste banana as the main flavor. The egg flavor is very subdued in the paleo pancakes. The cooking process brings out the sweetness of the bananas. I didn’t add butter and syrup to these. No need to honestly. I think they are sweet enough If you have some good maple syrup these are a good excuse to break it out.
