I decided to make some ginger cookies this year. They will of course be paleo and easy. There is reason I usually don’t do baking recipes on the blog. I hate baking. It’s too precise, measured and times for me. I like my cooking to be freestyle. I searched around the web for a paleo ginger snap type cookie to base the recipe on and in the end decided to make it up completely. I based it on my paleo bread recipe I did last year. I like it because it’s so easy to make without strict recipe structure. So let’s once again start baking.
Ingredients
If you’ve read many of my recipes you will know I like to use the fewest ingredients possible. Usually with baking the opposite is true. In most all my baking recipes I use a nut butter as a base and this is no exception. I prefer to use a nut butter over flour for many reason but I’ve had better turnouts with it.
For the Cookie
- 1 jar or almond butter
- 5 large eggs
- 1/4 cup Honey
- 2 tbsp of Ginger
- 1/2 tsp All Spice
- pinch of salt
Topping
- coconut butter (manna)
- Ginger and All spice mixed together
Making Them
Nothing difficult here. Empty your Almond butter into a large bowl, add in the eggs, honey and spices. Having a mixer here is a life saver or at least an arm saver. Mix ingredients till you have a smooth consistency. I realized that after I had my batter mixed I didn’t have a cookie sheet anymore. My former roommate tossed it out for “looking” rusty. Not one to let something like that stop me I used the mini muffin tin I have. I greased the muffin tin and filled it with the batter. Pre heat the oven to 350° and bake for about 12~15 minute or until a toothpick comes out clean. Even without using baking soda these things rose considerably, about a half inch. I cut them into four cookie slices. I next heated up the coconut butter and drizzled it over the cookies. In a baggie I mixed ginger and all spice and sprinkled it over them.
Taste Test
I tried these straight out of the pan and liked them. They had a soft dense bread like texture and not a hard cookie one. I don’t care for hard cookies anyway. The batter tasted plenty sweet to me with the 1/4 a cup of honey. I never use sugar so a little goes a long way. After baking it had lost some sweetness, so you might want to increase it. The magic happened when I added the coconut butter. The cookies went from being pretty good to down right tasty. Be very envious of the ladies at work who I’m taking these to.
