Paleo Banana Nut Crunch
My favorite cereal is by far Banana Nut Crunch. I love the stuff. Back when I ate cereal, which was about ten years ago, I ate the stuff often. Since then I usually eat a box a year. I was reading about a paleo cereal one day, which is an oxymoron in itself, and thought it would be great to remake my favorite. I kicked the idea around my head for a while and looked over the official box and copied the allowable ingredients. I changed things a big and added one of my own. This article will be short but sweet, literally.
I like as few ingredients in my food as possible and that was my goal for this project. The ingredients are as follows:
- Dried Bananas
- Chopped Walnuts
- Dried Blueberries
- Coconut Milk
I always like it when I can count the ingredients used on one hand. I went with store bought versions this time but would rather dehydrate my own fruit in the future. To make sure there are no added sugars or junk in the fruit. You can mix it however you want for this first test I used two handful’s of each. With the bananas I crushed them in my hand to get smaller pieces. Fill with the coconut milk and enjoy.
The taste was very reminiscent to me of the original. Not exactly the same but I’m willing to trade not eating gluten and other crap for a close taste. The bananas and blueberries give it plenty of sweetness and the dried bananas and walnuts fill the crunch factor. I am sure I will still buy my one box a year however my paleo version will make a great treat to get me through the year. Even though this is paleo it is still too sugary for me. I usually don’t eat much fruit but I don’t see any problems enjoying a bowl a week or so. Having a bowl of this once a week is a million times better than some surgery cartoon cereal. I still prefer bacon and eggs though the rest of the week.
