Every week I cook a weeks worth of lunches for work week. It saves me money and allows me to stick to the diet. The diet in this case is the Paleo Diet. I’ve been more or less on it for a year with a bit too much off. To ensure I am sticking to it I precook healthy meals at home. This week I’m making Ribeye steaks with a sautéed brussel sprouts, Taco meat on kale with home-made salsa, Chicken thighs and cauliflower curry and Pork chops with broccoli and cauliflower with a mustard sauce. Sound fancy smancy but it’s cheaper than eating out for the week and easy. I spent about an hour cooking four delicious meals. Let me some you how.
This week I went a bit cheaper and got everything from Walmart. I have never tried kale before so thought I’d give it a shot this week. In the picture you’ll notice two cans of chicken, salsa, eggs and spinach in the back. Those are for breakfasts. I just put three eggs, half a can of chicken and a handful or two of spinach in a glass bowl mix and microwave. After cooked I add a little salsa to it and eat. I got the idea from Tim Ferris super easy.
I cook almost exclusively with cast iron. It’s easy to clean and they last forever. No having to replace every few years like Teflon. Except to the stupid as seen on TV green skillet in the back. That thing will not last forever and needs to go into the trash.
I really need to invest in two more cast iron skillet’s to be able to cook all four meals at once. You will notice the lovely handle Holders made by my friend Angelea from D&A Sisterly Fashions and Art If interested I’m sure she could make you some. I love mine it makes cooking so much less dangerous.
Letting everything cool down while I move on to the Curry and veggies.
I seared the chicken thighs then added in a can of coconut milk curry seasonings and the cauliflower to simmer.
I got tired of buying salsa with questionable ingredients so I know make my own. Its super easy, delicious and I know exactly what in there. In this case it’s two tomatoes, one onion, one avocado, one jalapeno and some cilantro. I roughly dice the tomatoes and put them into a container.
Next I do the same to all the other ingredients. I like my tomatoes to be a bit chunky. In the back is my butter tub compost container. I fill it up through the week then just add under my mulch. Cant have a real compost pile in an apartment.
Give the onion, avocado and pepper a run through the food processor then add it back to its bowl.
I pulse the tomatoes a bit to get them chopped some but with a few larger chunks left. Then I combine with the other bowl to mix.
I chop some cilantro to add to the salsa as a finishing touch.
Add salt and pepper to your preference and you have yummy salsa.
I love brussel sprouts just not eating them whole. So I throw them in the food processor and chunk them like slaw.Then I add them to a skillet with sautéing onion the season to taste.
At this point all the cooking is done I just need to assemble them into dishes and pack for the week.
I add a bed of kale for my taco salad lunch. Then top it with my homemade salsa.
It might not look the prettiest but it sure is tasty. It’s also very nutritious.
The Chicken curry is ready to go into the container as soon as it cools.
I slice the steak into strips to make it fit in the bowl and for ease of eating at work. I add the steak strips to a bed of the brussel sprout mix.
I cut the pork chops like the steak and add them to the broccoli cauliflower mix.
That’s what I’m eating this week. Healthy paleo lunches ready to go. Precooking is vital for compliance having food ready to go eliminates temptation to just grab some junk from a restaurant. What are you eating for lunch this week?
