Low Carb Egg Pizza

I’m back! The sickness I had last week that kicked my ass is over and I’m hungry! To cure my hunger I’m making an old favorite recipe of mine from before I went paleo. Before the switch to paleo I had been just eating  low carb. Once, while I was craving pizza and didn’t want to break my diet I googled a recipe for a low carb pizza. The recipe I found many years ago turned out to be delicious. It hit the spot and became a regular meal for years before switching to paleo and giving up dairy. I had in fact forgotten all about egg pizza until a few weeks ago when an ex girlfriend of mine mentioned it and how much she loved it. Well I decided to make up one and show you how you can make egg pizza too. Egg pizza is the perfect dish to make for a special lady, chicks love egg pizza.

The recipe for Egg pizza has the two things I love most in a recipe: It’s easy to make and tasty. The ingredients are simple, to make an egg pizza you will need the following:

Ingredients

  • 5 or 6 large eggs
  • Two cups of Mozzarella Cheese
  • One cup of Cheddar Cheese
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • Marinara sauce
  • Pepperonis

Preheat your oven to 450°

First we have to make the crust for our pizza. Break your eggs into a bowl and add the garlic powder and Italian seasoning. Thoroughly mix the eggs and seasoning. Next add your cheese’s and mix. You should have a thick but pourable mixture. If it’s too thick add another egg.

Once your done mixing pour the mixture onto a greased pizza pan. I like to wiggle the pan around until it spreads out to the edge of the pan. Place the crust into your pre-heated oven on 450° for 12 minutes.

The crust should come out golden brown and delicious. Check to make sure it is cooked throughout. It should have a spongy texture like a real crust. Add the marinara sauce now. I only like a little bit so I add a few tbsp’s and spread it out till about an inch from the edge to leave a crust. Sprinkle some more or the left over cheddar cheese or any cheese on top. Next add any toppings you like, I went simple and just used pepperonis. After all the toppings are added put it back in the over until the cheese is melted.

After a few minutes you will have a delicious egg pizza. Let cool for a few minutes then slice like any pizza.

I can’t believe how much I enjoy egg pizza and how I could have gone so long without making any. Yes it’s not paleo but it’s still light years ahead of regular pizza in terms of health. As an occasional treat I could not knock anyone for enjoying egg pizza. So make up some and let me know what you think. I’ve yet to make this for anyone that doesn’t like it.
