Cooking With Your Preps: Chicken and Collard Greens
Because of some things popping up I had been a bit short on money and did not want to use any savings or cash stash. The only thing I needed was lunch at work for one day. Well I have food storage so lets hit the pantry and whip up something delicious and Paleo friendly.
What i came up with is a can of chicken and canned collard greens. These are two items I store a lot of and rotate through quickly.I’ll be using coconut oil to sauté the chicken in.For this dish I used two tbsp of coconut oil.
Once the coconut oil gets hot enough to sizzle a small piece of chicken I put the rest in. I let it cook till the chicken begins browning. Once the chicken is sufficiently browned and broken into a shredded consistence add the collard greens.
I mixed the two thoroughly. Once mixed I started to add the spices. I used a dash of kosher salt and fresh ground black pepper. Some paprika, red chili flakes, and some hot sauce. I like my collards to be spicy.
All in all I threw this together in about ten minutes. This dish is 100% from my preps and could easily be made over a fire in the cast iron skillet. Although the ingredients in this dish are paleo I wont stamp it with 100% paleo. Using canned foods should always be a lower priority. They do not contain anything funky but the nutrient content is not as high. It is delicious and healthy though and definitely many times better than a bagel or fast food. Skip the expensive and unhealthy food and make something good in a few minutes. What have you made from your preps recently? Let me know in the comments.
