Coconut Milk Ice Cream

It’s getting warmer outside and that means that it’s time for ice cream. I am OK with the occasion treat but would rather keep to eating paleo when possible. So If I can make homemade paleo ice cream, meaning no dairy for starters, then all the better. Also being homemade I know all the ingredients in the ice cream. Lets get down to this quick and easy recipe.

I like it when I can use the least amount of ingredients possible and with this recipe I only used three. The ingredients are as follows:

  • 2 cans of coconut milk
  • 1/2 cup of honey
  • two TBSP of vanilla extract

Empty your two cans of coconut milk into a large mixing bowl add in the honey and vanilla extract. Whisk the ingredients together to until the honey is dissolved.

Freezer Bag Ice Cream

I’m using the freezer bag method that became popular on the internet recently. For this you will need two quart sized bags and one gallon sized one. Fill a quart size bag half way with the coconut milk mixture. Squeeze out most the air then put it inside the second quart bag, once again squeezing out the air. Put your quart baggies into the gallon size bag and fill half way with ice and a half cup of coarse salt. Do not skimp out on the salt. My first time trying this I only used four TBSP of salt and couldn’t get the mixture cold enough. You will need to put on some gloves, mitts or get a towel for the next part. Shake and massage the bags for the next ten minutes. the mixture should get to the soft serve consistency. That’s how easy this ice cream is.

Taste Test

This definitely fills the ice cream gap in the paleo world. It had a rich coconut vanilla flavor. It was very creamy and just sweet enough. Even though this is composed of paleo items and I would call this paleo ice cream  it is still a treat that should be eaten only on occasion.
